Wine Making
Grapes are hand-picked at optimal ripeness to ensure the best flavor and quality.
The harvested grapes are gently crushed to release their juice. For white wines, the juice is quickly separated from the skins to maintain a lighter color and prevent tannin extraction.

After aging, the wine is clarified, filtered, and then bottled under controlled conditions to maintain its quality.
Vineyards
The soil composition in Lake Country is a mix of glacial silt, sand, and gravel, laid down by ancient glaciers that once carved through the valley. These well-draining, mineral-rich soils are ideal for cool-climate viticulture, helping to naturally control vine vigor and contributing to the intense aromatics and structured acidity in the finished wines. The high diurnal temperature shifts—warm days followed by cool nights—enhance flavour development while maintaining the crisp, fresh character that defines the wines from this region.
The Goldie and O’Rourke Vineyards are also farmed with sustainability and long-term stewardship in mind. The team takes great care in soil health, water conservation, and biodiversity, ensuring that the land continues to thrive for generations to come.
Together, the terroir of Lake Country and the thoughtful vineyard practices at Goldie and O’Rourke Vineyards allow Peak Cellars to craft wines of balance, elegance, and a true sense of place—wines that speak clearly of where they come from, and the people who care for them.
Nestled in the heart of the Lake Country Geographical Indication (GI), the Goldie and O’Rourke Vineyards are the foundation of Peak Cellars’ estate-grown wine program. These vineyards, planted and meticulously managed by the team at O’Rourke Family Estate, represent the culmination of vision, innovation, and respect for the land.
Located on the northern edge of the Okanagan Valley, the Lake Country GI is known for its cooler climate, higher elevations, and glacially influenced landscapes. These elements combine to create one of British Columbia’s most distinct winegrowing regions. The proximity to Okanagan Lake moderates temperatures, reducing the risk of early frosts and providing a long, slow ripening season—ideal for preserving natural acidity and developing nuanced flavour profiles in the grapes.
The Goldie and O’Rourke Vineyards benefit from this unique microclimate, with vineyard blocks planted on a diverse range of slopes and exposures. These variations allow for precision viticulture and the expression of subtle differences across small lots. Elevation ranges from 440 to over 700 metres above sea level, creating a dynamic growing environment and encouraging complex phenolic development in varieties like Riesling, Chardonnay, Gewürztraminer, Grüner Veltliner, and Pinot Noir.
