2021 Glacial Till Pinot Gris
Picture yourself sitting on a blanket under an elderberry tree in full bloom, about to enjoy a vanilla ice cream sundae topped with freshly grilled peaches and sweet whipped cream. Soon you’ll be carried away in a breeze of satsuma, clementine and honeyed beeswax swirled in creamy lees with a hint of anise. You’ll then find yourself sitting outside a European bakery, indulging in all the things; croissants, brioche, Panettone and bread braids twisted with candied orange. The rich oily palate runs long, with hints of anise and a refreshing finish of white grapefruit and Rainier cherry.
We’ve always thought this to be the red wine of white wines – it has the weight, structure and richness to be paired with heartier heavier dishes with some nice fat and protein. Fatty and oily fish, such as sable fish, black cod and Bluefin tuna would match well, as would a nice steak or a gourmet burger topped with bacon. If you want to lighten things up a little, try some charred chicken skewers with BBQ’d fruit, namely peaches and pineapples!
